Tomato Pie
Side dish
Ingredients
3 tomatoes, peeled and sliced
1 cup mayonnaise
3/4 cup cheddar cheese, shredded
1/4 cup parmesan cheese
1 pie crust, deep dish
basil to taste
chives to taste
pepper to taste
Instructions
Preheat oven to 350 °F.
Place tomatoes in pie crust.
Sprinkle with basil, chives, and pepper as you layer the tomatoes.
Add mixture of cheese and mayonnaise on top.
Bake for 30 minutes.

Serves 6
Vermont white cheddar cheese is good in this recipe.
If you dip the tomatoes in boiling water for 30 to 45 seconds, the skin is very easy to remove.
Dried herbs work just fine, but fresh are better if available.
Occasions: Susan Ross made this either in 1998 or 1999.
