Susan's Creamed Corn

Ingredients

  • 5 ears fresh corn on the cob
  • 1 tablespoon butter
  • 1/2 cup milk
  • 1/2 tablespoon sugar — or splenda
  • salt and pepper — to taste

Instructions

  1. Shuck corn, and slice kernels off the cob with sharp knife. Discard cobs.
  2. Melt butter (amount is approximate) in a large frying pan and add the corn. Cook about 2 minutes just until it starts to sizzle.
  3. Add enough milk to get it to a moist consistence (1/2 cup is estimate), and sprinkle with about 1/2 tablespoon of sweetener of your choice.
  4. Salt and pepper to taste.
  5. Cover and cook at least 10 minutes, but it can be allowed to simmer (very low) as long as needed till rest of dinner is ready.
