Spring Pea Crostini with Radish

Ingredients

  • 6 Tablespoons butter
  • 1 shallot, minced
  • 2 cups fresh or frozen peas
  • 1/4 cups parmesan cheese
  • salt and pepper, to taste
  • 8-10 radishes
  • juice and zest of one lemon
  • crostini

Instructions

  1. In a sauté pan over medium high heat, melt the butter.  Lightly sauté the shallots until translucent.
  2. Add the peas and cook for about two minutes.
  3. Season to taste with salt and pepper.
  4. Remove from heat.
  5. Smash or process in the food processor until it is a spreadable constancy.
  6. Add the Parmesan.
  7. Thinly slice the radishes.
  8. Toss with lemon juice and zest; salt and pepper to taste.
  9. Spread each crostini with the pea spread.  Top with 3 or 4 slices of radish.
