Radish Feta Dip

Ingredients

  • 4 oz radishes (about 6), julienned or grated
  • 1/3 C sour cream
  • 1/4 C feta cheese crumbled
  • 1 lemon, zested and juiced
  • salt, to taste
  • fresh dill, for garnish

Instructions

  1. In a food processor, mix the sour cream, feta, and lemon juice and zest until smooth.
  2. Scrape into a bowl and fold in the radishes and dill.
  3. Season to taste as needed with salt and more lemon juice.
  4. Serve with pita chips, radishes or chopped vegetables.

Notes:

Yield: 1 cup
