Ingredients

8″ skillet [amount in italics and brackets if for a 10″ skillet]

  • Flour, Low-Protein, all purpose 2 Cups [2 1/2 Cups]
  • Sugar, Granulated 3 Tablespoons [1/3 Cup]
  • Baking Powder 2 Teaspoons [2 1/2 Teaspoons]
  • Salt, Kosher 1 Teaspoon [1 1/2 Teaspoons]
  • Butter, Very Cold 5 Tablespoons [6 Tablespoons]
  • Buttermilk, Full-Fat 1 Cup [1 1/4 Cups]
  • Heavy Cream 2/3 Cup [1 Cup]

For Shaping

  • Flour, Low-Protein, all-purpose 1 1/2 Cups [2 Cups]
  • Butter, Melted 4 Tablespooons (both skillet sizes)

Instructions

  1. Preheat oven to 425 degrees
  2. Butter the bottom and sides of a 10 inch cast iron skillet
  3. Mix together dry ingredients
  4. Grate the butter into the dry ingredients and cut into dry ingredients
  5. Pour buttermilk and cream into dry ingredients and stir until just combined. The dough should resemble
    cottage cheese
  6. Use 4-ounce scoop or spoon to place dollop of dough into a bowl with the
    remaining flour
  7. Sprinkle flour on top. Pick up dough ball and gently shake off excess flour
  8. Place into the skillet very close together
  9. Bake for 20 minutes until golden brown and set
  10. Pour butter over biscuits as soon as they are out of the oven

Notes:

If using self-rising flour, omit baking powder
