Dave Anderson's Pesto

Ingredients

  • 5 stalks fresh basil
  • 16 ounces cottage cheese, lowfat — nonfat is just as good
  • 1/4 cup extra virgin olive oil
  • 1 cup pine nuts — or walnuts
  • 5 cloves garlic
  • 3/4 cup parmesan cheese

Instructions

  1. Mix all ingredients except pine nuts together in a blender or food processor.
  2. Add water to get right texture if necessary (kindof like thick pancake batter).
  3. Add pine nuts and process briefly. The more you process, the smaller will be the pieces of nut in the final product.
