Slice brie in half horizontally, and carefully peel back the top being careful not to split the brie.
Put several pats of butter and some brown sugar on the open face of brie. Sprinkle pieces of chopped dried apricots over the brown sugar. Carefully replace the “top” of the brie.
Repeat the same process on the top of the brie: butter, brown sugar, and chopped dried apricots.
Before serving, bake in 300 °F oven until warm but not liquid. Serve with water crackers.
