Banana Bread

Ingredients

  • 1/4   pound  butter (1/2 stick)
  • 1  cup  sugar
  • 2  eggs
  •  3  tablespoons  buttermilk
  •  1 teaspoon  baking powder
  •  2  cups  flour
  •  4  bananas
  •  1 teaspoon  baking soda
  •  1 cup  nuts — optional

Instructions

  1. Dissolve soda in buttermilk (note dissolve soda in this step, not baking powder)
  2. Melt butter.
  3. Mix soda/buttermilk mixture, butter, and  sugar.
  4. Beat eggs slightly; add.
  5. Sift flour and baking powder together; add.
  6. Mash bananas well; add.
  7. Add nuts if desired.
  8. Bake at 350 °F for about an hour in greased loaf pan. Bread is done when toothpick inserted in center comes out clean.

Notes:

Recipe from Carol Reeves (Char’s mother). Good with whole wheat flour.
