Preheat oven to 450 °F.

Break eggs, placing all whites in one bowl, and keeping each yolk in its own small bowl or plate (don’t want them to break). (Note: internet video showed using an empty plastic bottle to remove the yolk.) Keep the yolks separated, because you want to use them whole.

Whisk the whites until stiff peaks form in a chilled bowl.

Add bacon, chives, parmesan, and anything else desired.

Mix. Line a cookie sheet with parchment paper, wax paper, or a silicon sheet. Place egg mixture in 4 heaps. Use the back of a spoon to hollow a nest-like depression in each

Bake for 3 minutes.

Place a yolk in each nest and bake for 3 more minutes.
