Rich Belgian-Style Waffles

Ingredients

  • 1 egg yolk
  • 1 cup sour cream
  • 1/2 cup milk
  • 3 tablespoons butter — melted
  • 1 cup flour
  • 2 teaspoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 egg white — stiffly beaten

Instructions

  1. Preheat waffle maker.
  2. Put all ingredients except egg white in a large mixer bowl. Beat on low until moistened. Increase to medium, mix until smooth.
  3. By hand, gently, fold in beaten egg white.
  4. Pour a rounded 1/2 cup of batter over griddle. Close waffle maker, bake until steam no longer escapes, about 3 to 5 minutes.
  5. Repeat.

Notes:

Serve hot with warmed syrup or strawberries Romanoff.
