Mix milk, sugar, salt, and tapioca.

Heat on medium until hot; remove from heat for a minute.

Beat yolk of eggs (one egg only if you want it less thick) and pour about 1/3 of the mixture on the yolk mixing as you do. Then, pour this back in the original cooking pan and put back on the heat.

When mixture comes to the first boil, immediately remove from heat and add vanilla. This must be stirred constantly.

When cool, fold in the beaten egg white to which you can add a bit of sugar.
