Ed Anderson's "Wicked Good" Stuffed Mushrooms

Ingredients

  • 24 mushrooms, stems removed
  • 1 Tablespoon butter
  • 2 Tablespoons onion, minced
  • 1 large garlic clove, minced
  • salt to taste
  • 2 Tablespoons chopped parsley
  • 1 teaspoon dried thyme
  • 2 Tablespoons breadcrumbs
  • 2 Tablespoons white wine (or substitute chicken stock)

Instructions

  1. Preheat oven to 375 °F
  2. Melt butter in frying pan over medium-high heat. Sauté mushrooms and onions for 4-5 minutes.
  3. Add garlic and salt; sauté for 2 more minutes
  4. Remove from heat and add remaining ingredients.
  5. Stuff mushroom caps and place in prepared baking dish.
  6. Bake for 20 minutes, or until liquid begins to form under mushrooms
