Ed Anderson's "Wicked Good" Stuffed Mushrooms
Side dish
Ingredients
24 mushrooms, stems removed
1 Tablespoon butter
2 Tablespoons onion, minced
1 large garlic clove, minced
salt to taste
2 Tablespoons chopped parsley
1 teaspoon dried thyme
2 Tablespoons breadcrumbs
2 Tablespoons white wine (or substitute chicken stock)
Instructions
Preheat oven to 375 °F
Melt butter in frying pan over medium-high heat. Sauté mushrooms and onions for 4-5 minutes.
Add garlic and salt; sauté for 2 more minutes
Remove from heat and add remaining ingredients.
Stuff mushroom caps and place in prepared baking dish.
Bake for 20 minutes, or until liquid begins to form under mushrooms
